What started out as a butcher shop concept, has evolved and changed over the years to become a full-service restaurant, which was solidified with the restaurant's move to a larger space in 2022. At Bavette, the consumer will enjoy complete transparency of its food moving from farm to plate. Although the butcher shop has been phased out, the restaurant still works with the same farms, and uses the same high quality meats on its menu, which consists of a daily changing menu consisting of salads, sandwiches, small plates, pates, cheese, and charcuterie boards. The restaurant truly is a farm-to-table restaurant, sourcing not only the meat but most of its produce from nearby farms. In addition to the highly seasonal menu, there is a small store featuring chef-curated retail items, such as Wisconsin cheeses, local charcuterie, artisanal jams, pickles, salts, vinegar, and oil. Everything was perfect. The service was impeccable and the food was awe-inspiring. The grilled honey nut squash was excellent as was the focaccia and ricotta. The ricotta filled pasta was amazing!! We had the contamar fish and the walleye and we were blown away. I love that the chef uses local fish instead of flying in some Chilean Seabass or something. It was all so delicious. I can’t wait to go back. After living in San Francisco for 18 years, I moved to Milwaukee recently. I was a little worried about the culinary scene, but Birch is absolutely at the top of the restaurant game in every way. They would fit right in and even stand out in SF or Napa.

Everything was delightful! Wonderful and attentive server, Kayla - awesome! The food was outstanding - beautifully prepared and presented. Drinks were excellent! Love the ambiance and added perk was the holiday decor which made the space even more welcoming. We had several noisy tables around us which was a little disappointing for our table. Overall, however, a great experience and wonderful vibe.

Everything was great from the waiters to the food. Food portions were just right. Having 4 choices for the appetizer as well as the entree would suit any tastebuds. This was my first time eating a MATC Cuisine and will be coming back.
