A client should feel comfortable, not in stage before your staff, needing to uphold the standards of the aristocracy. In other words, I expect perfection, but you shall not expect perfection from me. Such is life. And more directly - have each server, no matter what level, make eye contact and say “Merci” at least once. Otherwise, the best Montreal dining experience thus far. We came after looking at the menu and when ordering we were told the foie gras was not available. A BIG disappointment. So I ordered the octopus with chorizo. The presentation was well done, the taste and texture was excellent. I also ordered the duck. Again the presentation was nicely plated and the flavors were beautifully executed, but it was overcooked and tough. My wife had a pear salad that was very tasty and the lamb, which I thought was very gamey, my wife enjoyed it a lot. Also beautifully presented over a bed of couscous.
