How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

    Disappointing visit. Food was slow to come out and wasn’t great. Service & meals are usually fantastic, but this was far from the case this time. Hopefully this isn’t the new norm, because we frequently dine here.

    Took far too long to get our food. Not very hot. Our waiter (Ethan) was not very attentive. The manager (Mark) was helpful and brought 2 birthday desserts on the house.

    Went for Valentines, had a great experience. We ordered the Tomahawk and it was divine, excellent service. Even the manager Javier greeted us ❤️

    The food was amazing as usual, however the service was terrible. I get that it was Valentine’s Day but still. Sat on time, ordered fairly quickly. We didn’t see our server again until he returned my card. Took almost an hour for the food to come out, it took so long for our server to return the manager noticed us looking around and came to see if we needed our check.

    The entire meal was delicious. We had an appetizer, cocktails, sides, 2 main course and dessert! Every item was served quickly and we enjoyed every bit.

    We had a reservation for 3 but still waited 15 mins & when we got upstairs it wasn’t full at all. The food took a long time to get to us. The waiter was really nice but he didn’t check on us enough, I had to ask another staff to clear our table from the dirty plates after eating our appetizers. I also had to ask for extra napkins bc they only gave us 2 when there were 3 of us granted my daughter is 2 yrs old but she needs the napkins the most. Outside of that the food was amazing and when the waiter came around he was amazing too.
