Located in the heart of the old railroad and mining town of Minturn, the Saloon’s building dates back to 1901. During the last one hundred years it has been, at one time or another, home to various taverns, restaurants and even back room gambling for railroaders. While the last five decades have seen the development of Vail and Beaver Creek resorts just seven miles on either side of Minturn, the town’s appearance and feel retains its historic Colorado roots. Recently under new ownership, The Saloon has undergone a complete renovation and reopened in November of '23 with a fresh new menu and updated space. Chef Anthony Mazza's menu features slow-cooked short rib and pork cheek and Colorado River Ranch wagyu steak. The nostalgia and historical memorabilia and photos remain. I would echo what other reviewers have said about very slow service, unavailable items, and overall price to value. The food was delicious, but we had a very slow start. It took almost 25 minutes from the time we sat down to place a drink order and the restaurant was not full at all. We nearly left because it felt like they may not serve us despite having a reservation. They have a strict policy that charges you if you do not cancel your reservation 48 hours in advance, which is fine, but you should offer good service to your customers if you are going to maintain such a rigid policy. This restaurant would be excellent if they were not short-staffed and had very slow service. I have still given them a 4 star rating because the food was very good and I could tell they were trying....but they could do better on the service side for sure.
