Established in 1995, located in Eagle-Vail halfway between Vail and Beaver. Featuring authentic northern Italian cuisine, served in an atmosphere reminiscent of little Ilaly. The dress code is casual however the fare is anything but. Featuring dishes such as Pasta Fritta, Insalata Griglia, Petti di Pollo alle Fragole, and Risotto Pescatore. Located in the heart of the old railroad and mining town of Minturn, the Saloon’s building dates back to 1901. During the last one hundred years it has been, at one time or another, home to various taverns, restaurants and even back room gambling for railroaders. While the last five decades have seen the development of Vail and Beaver Creek resorts just seven miles on either side of Minturn, the town’s appearance and feel retains its historic Colorado roots. Recently under new ownership, The Saloon has undergone a complete renovation and reopened in November of '23 with a fresh new menu and updated space. Chef Anthony Mazza's menu features slow-cooked short rib and pork cheek and Colorado River Ranch wagyu steak. The nostalgia and historical memorabilia and photos remain. The space still feels like The Saloon, but carried into the present day. Enjoy a resurrected Colorado Saloon and feel the history all around you.

    We have been coming to Beaver Creek for over 20 years. Fattoria has become one of our favorite dining experiences. We dine here both winter and summer trips. The food and wine menu are exceptional! The Fattoria Team remembers our names and always provides friendly service. Our server Josh was great. Always nice to see Steve who was host for the evening. Cheers!

    Had the opportunity to catch up with these fine folks on Flamenco Friday. It was great show, very uplifting and the food was great! This is our second year coming to this restaurant from Florida. Thanks for the great service!!!

    On Friday-Sunday they also have a German menu, which is very good! They also have a selection of German beers. My wife likes the Schnitzel with red cabbage & spatzle, but this time I tried the goulash, which was excellent. The service was great, & the owner makes a point of stopping by & asking your impressions. If you like German food, can’t go wrong @ China Garden!
