Pure, well balanced flavours and excellent preparation of the fine and very fresh ingredients. Excellent wine choice too. We had a surprising natural savagnin wine matching every course. Usually not much of a desert lover but the chocolate cake blew me away anyway. Paired it with the dry madeira to accommodate for my European non-sweet tooth. Luckily for us, we picked the right hotel! I of course got the sampler of three different traditional NOLA items: red beans and rice; gumbo; and jambalaya. Perfect way to start our vacation.
