Clark and Schwenk, friends over the years, discussed starting a place of their own and traded ideas over what the menu would be like. Finally, at the beginning of 2007, they felt ready to strike out on their own and made that vision happen. “I looked around Atlanta and saw a need for a really good old-school restaurant,” Clark says. That restaurant would become C&S Oyster Bar, specializing in classic New York and Paris brasserie-style cuisine. Clark possesses a passion for French cuisine and claims that it comes from the French’s appreciation for balance. Their focus on vegetables, fish, and meat as the primary vehicles of flavor allow for emphasis to be placed on the freshness of the ingredients. Proper attire required. Three of us dined here on a Monday night for the "Margarita Pizza Special" for $10 with $1 per topping up to three toppings. I chose mushrooms and spinach as my toppings, but my pizza crust was too crisp and not very tasty. I'm so used to ordering the Fungi pizza that is excellent, so this was a disappointment. My husband thought his pizza was very good with the fennel sausage and a couple of other toppings. The fennel sausage gave it more flavor. My brother-in-law got anchovies on his pizza, and he enjoyed it. Adam took great care of us and recommended the Prosecco to me, which was dry and delicious. My husband enjoyed his red wine.
