Back after more than a two year closure following the George IV Bridge in late 2021, Merchants has undergone a full refurbishment. Merchants serves Scottish cuisine in one of the most bustling areas of Edinburgh.     Absolutely outstanding from start to finish! From the minute we walked in staff greeted us with a smile and couldn't be more helpful. Great hospitality, food was absolutely amazing! Best meal we've had in a long time, food was outstanding. Honestly can't rate this place enough, now recommended it to all I know. Restaurant was spotless and was so tranquil. Thank you for making it a lovely night from start to finish. Definitely our new place to dine and look forward to coming back.

    Bella our waitress is what made the evening a very good experience tbh she was friendly and helpful hardworking and we had a good laugh with her . Atmosphere was a little louder than we expected but still an overall good night for valentines night . The valentines menu was a good mix of light starters and deserts with a good size sharing meal for 2 as a main ! Service was exceptional Bella deserves a pay rise 😊

    Overall really great meal, got the wrong starter to begin but was corrected quickly and got a free glass of wine. All the food was delicious and the staff were friendly. Definitely will be going back at some point
