The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began. Zacatlán Restaurant desires to continue to preserve the traditions for our upcoming generations, while bringing forth new flavors. These new flavors incorporate Southwestern and Mexican influences.     I am kicking myself for not going to Joseph's sooner. Back in the day I went to his restaurant in Taos, and now I will become a regular when I am in Santa Fe. The food was innovative and delicious. Our server who might have been named Kira (or something close to that) was one of the best waiters I have ever had. It was an amazing evening out top to bottom and not outrageously or gratuitously expensive. I am a new (old) fan of what Joseph is doing in the world.

    An exquisite experience, start to finish. May have been our best meal ever from the beginning (chef's moles) to the end (Princessa--light pastry and cream with fresh berries) and Carajillo (Mexico City style coffee with Licor 43, Godiva Dark Chocolate Liqueur, espresso, and cream). We shared Sopa de Amor (to-die-for pamblano soup), Xochimilco (huitlacoche), and black pepper-encrusted aged Angus beef tenderloin. All perfectly prepared and delectable.

    Coyote Cafe is a staple in our Santa Fe restaurant rotation. Every meal we’ve had there has been excellent. New Year’s Day was no exception (even though we were still full from our New Years Eve dinner lol). Started with the kampachi and then I had the sea bass and my husband had the elk tenderloin. I opted for wine by the glass instead of bottle (see NYE comment above) and the server recommended a wonderful, minerally white that perfectly complemented the fish. We’ll definitely be back!
