With it being less busy, the ambiance was nice and quiet. I was able to hear my conversations. The food was amazing!! The Sweet Corn Agnolotti was very good but lacked a sufficient amount for how much the dish is. The Spicy Pomodoro was amazing!! One of my favorites here and for the amount of pasta it has, it is worth your money. I was not expecting to like the Banana Tiramisu but I enjoyed it so much! The food was a stunning combination of originality, flavor, and artistry, each dish a masterpiece that delighted the palate and the eye. Service was impeccable, with the timing of each course orchestrated to perfection. The building itself is a marvel, adding a unique and modern dimension to the experience. While the evening was nearly flawless, there were a few minor areas for improvement. The final dessert felt overly elaborate and heavy, making it challenging to fully enjoy at the end of such a substantial meal. The dessert room, located near the entrance, was uncomfortably chilly on a cool evening, requiring us to retrieve our coats. Lastly, the $20 valet charge came as an unwelcome surprise, especially considering the restaurant’s high price point and the fact that the parking lot is private and on-site. A clearer sign or complimentary parking would have better matched the overall premium experience. There are so many "fancy" restaurants in Los Angeles where the food is disappointing, but this was not one of them. Having known about Republique for many years and seeing it on many "best" lists I was prepared to be disappointed, but it met my expectations. My parents and I were very pleased with our meal, the service, and the ambience which is beautiful. While the octopus was decent, it was slightly overcooked and just okay. In our opinion, the Little Door Caviar was the standout starter—its flavor was far superior. For mains, the Branzino was perfection—crispy and flaky on the outside, tender and soft on the inside. The ribeye was equally fantastic, cooked beautifully and packed with flavor. We finished the meal with the crème brûlée, which was the perfect dessert—smooth, creamy, and with a perfectly caramelized top. The service was impeccable, making the evening truly special.
