John was missing tonight, but Justin and Albany were just as awesome. Of course the steak is the very best and their shrimp cocktail has to be the best we’ve ever had. Must try!!! Waiter provided a brief description of dishes when asked. Checked in often. Attentive and patient. Servers described in greater detail the dishes they bring to the table. Food: Miso soup had two thin tofu slices garnished with diced chives. Moderately hot. Sea bass with black bean sauce was homey. Topped with ginger slices and chives. Black bean sauce was great over rice. Black cod with miso was delicate and velvety. Miso glaze was mildly sweet and savory. Black cod melted with every bite. Shrimp with spicy garlic sauce was well-seasoned. Shrimp had a perfect bouncy texture. Cucumber salad with crab had a zesty vinaigrette. Pickled radish wrapped around the crab was a refreshing bite. Cleansed the palate. Vanilla Miso Tart was creamy and delightful. Bento Box: Dark chocolate lava cake had an accompaniment of a variety of berries. A perfect balance of bitter and sweet. The offerings were plentiful and varied....from Asian, Mexican, Italian, Seafood Station, Carving table, omelets. Our server was a bit laggy, we had to flag her down for refills on coffee and water. The ambience is nice if a tad confusing...I had to remember where we were seated. The price was $99 a person....pricey yes but it was the holiday so no whining. Our view was the incredible fountains of Caesars Palace. Such a fun, exciting dining experience. John was our server and he went above and beyond! I have a very dangerous allergy to milk protein and he asked us right away if we had any food allergies he should know about. He let me know that there was dairy in 2 of the items we were ordering. (they were for my teen) I thought that was so special. Food allergies are so embarrassing, I really appreciated the care John took! His server assistant was professional, and friendly. The restaurant was packed and you would never have known that by the way our table was taken care of. Well done. We're Vegas locals, so we're fortunate to have a lot of great dining choices. This was one of the best meals we've ever had. Highly recommend Hell's Kitchen. You made our Christmas Eve very special and memorable.
