The service was fabulous and ambience excellent…the set menu had delicious options and we enjoyed mains of John Dory and venison…flavors were incredible! Even though she was working the whole floor, we honestly felt like she was our own personal server. Very charming. Very knowledgeable about all the different brews and was even able to recommend exactly which ones to pair with certain types of food. She also took the time to discuss all the other options on tap that we didn't choose and even offered us a few samples to try. As a result we tried other beers therefore staying longer than we anticipated. I hope Guinness recognize the assest they have in Ana. As for the venue.... we liked it. However, I don't understand why they don't open it to the public to just walk in. It's such a hassle to try and book and then stick to that time. Also, the atmosphere reflected exactly that. The place was half empty for most of our stay which was a shame because I've been trying to visit for months (I live abroad but return home every few months) so it was kind of frustrating as it's been such an effort to book a table when home. I know Guinness don't need the money and that this side of the brewery is experimental but just commit to it and open it up to the public without having to book. It would be busier more often and as a result would have a better atmosphere. The Christmas Toastie sandwich was delicious. Well done to whoever came up with that recipe. Perfect. To conclude... Ana needs to be recognized for her very obvious passion she holds for Guinness. Don't waste that. You often hear about what incredible employers Guinness were back in the day and how jobs were multi generational. A job for life they would say. I don't hear that about modern day employees.
