Our original plans were unexpectedly re-routed due to over two foot of snow in Telluride. Santa cafe was an unexpected and amazing surprise with the most savory and delicious food anyone could ever imagine and their staff giving up their Thanksgiving day to make ours special. Many thanks to all of you…and your hospitality, much appreciated! My husband enjoyed the calamari and I enjoyed the pillowy, pumpkin ravioli. This followed by the filet on celery root puree with scalloped stacked potato and herb side dish. I enjoyed the amazing bone in chop with some sort of pearl pasta in the most amazing wine reduction sauce! Waiter, somalier, stopped by and then the manager with a gift, it was a jar of hot rum mixture to take home and a sample at the table. It was delicious! The morcilla pinxtos were excellent, the lamb albondigas were bigger and tastier than we expected, and the baguette and olive oil were excellent. Chef was working the dining rooms last night—first time I’d seen him without his cowboy hat. There are dishes and flavors that can be found nowhere else in the United States. We’re from Texas and we know a bit about mole. No one matches the depths of flavors he is able to achieve. Trust your server—there are a couple of dishes that should be mandatory—Chef’s soup and his special dessert; your server will guide you. This is super-fine dining. Expect to spend several hours over dinner—it’s not fast food. Service is excellent and the rooms are beautiful. Plus, it’s not cheap. We were greeted warmly, shown our table, and, because we indicated it was our anniversary, were bright two glasses of champagne and addressed by name by our waiter, Parris. He truly knows how to provide table service! He made excellent recommendations and made sure our experience was top notch.
