In 1998, Buddy Guindon, his wife Katie, and his brother Kenny opened Katie's Seafood Market in Galveston, Texas. For more than 20 years now, Katie's Seafood Market has provided the highest quality of products available to its customers. The majority of seafood comes from local fishermen and shrimpers, including Red Snapper, Grouper, Golden Tile Fish, Flounder, Oysters, Shrimp, and Blue Crabs. A producer contacted Guindon in the hopes of doing a reality show about his family business. In 2015, the reality show 'Big Fish Texas' came to life on National Geographic. As a supporter of the local economy, In September of 2019, Buddy opened Katie’s Seafood House, next to the market. Katie’s seafood market supplies the restaurant with all fresh seafood. We take pride in being the only local seafood restaurant on the island that brings fresh fish straight from the boat and to your table.

    Our waiter Trey was an added bonus to our experience at this restaurant. We were visiting Galveston for the first time and of course eating at Gaido's was a first. He waa knowledgeable about the history of the restaurant, humorous and gave his honest opinion about some of the dinner choices we made. We would definitely return. The food was amazing I had the seafood pasta and the portion was very filling and the key lime cheesecake was magnificent!! The mojito, margarita and voodoo were all liquericious!!! Lol

    Rudy & Paco Restaurant & Bar is a place to go when you want calm ambience and well-prepared food. Most of the clientele seems to take seriously the business-casual dress code, which has great support from the best-dressed service staff that one can find in this vicinity. The restaurant's location adjacent to the 1894 Opera House is a setting for an interesting outing, whether for stand-alone dining or in preparation for other nearby entertainment activity.

    We made dinner reservations for 3:45pm and were promptly seated. Very good time as restaurant had a calming ambience before the crowds. Nice place with multiple seating areas from front to back. We were seated in Dinning Room which is 1/2 through the restaurant. We started with their Appetizer Platter & bottle of Italian red wine (Delacorte). Of course it was a delicious blend that our waiter Nathan said was popular with guests. For Entrees we enjoyed their Scallops (including a selection of local fish from the Gulf), and Lasagna Bologne. They were both hot and delicious. Of course everything about the dining out experience is strongly influenced by the staff employed, and our Server Nathan was efficient, knowledgeable, friendly & actually appeared to enjoy working there! We’d definitely return next time - this place is a welcome alternative from our “rushed” dining experiences back home in San Diego.
