At Old Wharf, we stand in the historical location of former jetties, piers, homes and taverns from where, since the 1800s colourful traders, merchandisers, exporters and explorers have shipped Tassie’s renowned produce across the globe.Chef Simon Pockran and his team acknowledge this history by creating a menu that celebrates and explores Tasmania’s traditional family dishes. Reimagined and refined, this menu gives the nod to our past while championing our celebrated produce and boutique Tasmania growers.

Belvedere feeds a growing global appetite for authentic local encounters intertwined with paddock to plate. Through thoughtful interactions, we will create experiences that talk to the providence of the site (through art and design) and to the produce we serve. The site’s colonial backstory serves as an entrée to its incarnation as ‘The Belvedere’ – a beloved Art Deco dance hall that shaped the city’s social fabric from the late 1930s. This story is memorialised in mesmerising chain art – featuring a 7.5m x 3m Kriskadecor panel.Paying homage to this memory, the new ‘Belvedere’ will take its rightful spot as a modern-day gathering place, inviting travellers, corporate crowds and locals to celebrate the best of Tasmania. From paddock to seashore, the menu will showcase the Apple Isle’s rich bounty of produce, and Cape Grim Beef will share centre stage with Meander Valley Chicken, local cheeses and artisan products.

I went to dinner at Leatherwood last Friday, Dec 13th, with a few friends. When I made the booking, I tried to find their menu, but to no avail. A little frustrating, but intriguing at the same time. In hindsight, it really didn't matter. What I was impressed with, and lookingforward to, was that they exclusively use Tasmanian produce. We were seated at a table directly infront of the open kitchen and servery. Our server, John, was lovely and very knowledgeable. It's the first time I have been to a Hilton Hotel, in any capacity, so I was entering with an open mind, but also expecting it to be a bit "grand". Don't get me wrong! It is lovely! But I was pleasantly surprised that it isn't pretentious and has a welcoming ambience. To me, eventhough it's a 5⭐️ hotel, it "feels Tasmanian". Now the food. (I wish I had taken a photo of the menu, so I can give accurate details of the dishes) I started with the scallops. It is 3 half-shells, each containing 3 (albeit small) scallops on cauliflower mash. I was very happy to see that they keep the roe attached. ✔️✔️ Others had oysters, and chicken liver paté. By all accounts everything was lovely! My main was Rack of Lamb done perfectly pink, with chimichurri and beetroot marinated shallots. Others had mussels, Wagyu steak, Market Fish (Blue Eye) and chicken. We shared sides of crispy roasted potatoes, fries, broccollini and Dutch carrots. All plates were (almost licked) clean! Everything was perfect! No-one could fault a thing. We were pleasantly satiated. Even the wines we had exuded warm murmurings. Then they brought us the dessert menu! So ofcourse we had to partake. Most of us had Leatherwood Crème Brûlée, with rhubarb jam and shortbread (don't be fooled by the 4 small hexagonal pieces on the plate. When the server tells you "don't eat them", DON'T. They may look like shortbread, but infact they are bees wax! [We didn't try to eat them]) One of our party had the Apple pie. All plates emptied once again! 10 out of 5 ⭐️❤
