Class sizes determine our availability as we are a student run restaurant. Our hours fluctuate with the number of students enrolled in the semester and some days we may not be open. Cuisine Restaurant is a student operated advanced training facility for MATC's Culinary Arts program. The restaurant allows students to gain practical experience in a high-end culinary environment. What started out as a butcher shop concept, has evolved and changed over the years to become a full-service restaurant, which was solidified with the restaurant's move to a larger space in 2022. At Bavette, the consumer will enjoy complete transparency of its food moving from farm to plate. Although the butcher shop has been phased out, the restaurant still works with the same farms, and uses the same high quality meats on its menu, which consists of a daily changing menu consisting of salads, sandwiches, small plates, pates, cheese, and charcuterie boards. The restaurant truly is a farm-to-table restaurant, sourcing not only the meat but most of its produce from nearby farms. In addition to the highly seasonal menu, there is a small store featuring chef-curated retail items, such as Wisconsin cheeses, local charcuterie, artisanal jams, pickles, salts, vinegar, and oil. Going along with the thoughtful menu is a select and unique offering of craft beers, wines, and cocktails.

    My wife and I are big fans of Birch, which is why we dined here on Valentine’s Day. We sat at the chef’s counter and really enjoyed the experience from beginning to end. It’s easy to see why Chef Knall is a 2025 James Beard nominee for best Chef Midwest. The GM at Birch is so personable and acknowledges us on every visit. It’s no wonder his staff is so helpful and courteous. Book your reservation with confidence.

    Bavette has the best roast beef sandwich I’ve ever eaten, and there is no close second. It’s pricey but worth it. Absolutely delicious. Attentive service, casual but professional ambiance.

    Everything was great from the waiters to the food. Food portions were just right. Having 4 choices for the appetizer as well as the entree would suit any tastebuds. This was my first time eating a MATC Cuisine and will be coming back.
