Fergus Henderson’s original home of “Nose to Tail Eating” opened in a former smokehouse around the corner from Smithfield Market in 1994.Celebrating the finest of indigenous British produce and making the most of what is seasonally best whilst applying straight forward cooking techniques, St. John is now celebrated as one of the 50 Best Restaurants in the World and in 2009 was awarded its first Michelin Star.Nose to tail eating means that, where appropriate, every part of the animal should be put to good use in the kitchen and so along with Roast Beef and Lemon Sole, diners will find Rolled Pig’s Spleen, Kidneys and Ox Heart, Liver and Chitterlings as well as the Roast Bone Marrow & Parsley Salad, something of a ‘signature’ dish.

In February 2022, the renowned British-Nigerian artist Yinka Shonibare CBE RA, and project architect India Mahdavi transformed the Gallery with a new installation of artworks and interiors. Shonibare’s artist-conceived vision presented a new sunshine-yellow setting designed by Mahdavi, marking a new culture-defining chapter for sketch in its 20th year. Using applique and embroidery techniques on richly dyed fabrics, Shonibare illuminates the influence of African traditions on European conceptions of our modern-day world.

Fatto a Mano serves authentic Neapolitan pizza, sides and more. We use fresh ingredients in a warm, friendly environment. Our dough is made fresh daily and proved slowly, meaning we’re able to use minimal quantities of yeast and our pizzas are light. Our commitment is to quality, we use carefully selected Italian and local British ingredients from a handful of small, independent suppliers to top our pizzas. We use independent producers as long term partners, including Fior Di Latte Mozzarella sourced from Caserta, and wines imported directly from private Italian growers. The pizzeria menu features classics such as margherita, salsiccia e friarielli, and diavola, whilst also featuring modern additions including lasagna pizza, homemade arancini, our own vegan ‘nduja pizza and scugnizielli dessert. Our Neapolitan pizzeria is in the middle of Covent Garden’s buzzy theatre-district. We’re a few doors down from the English National Opera, with a view of Trafalgar Square on our doorstep.

Established in 1999 and proudly celebrating twenty years in Borough Market this year, fish! was the first restaurant of its kind in London. Our concept is simple – providing our customers with the best quality fish, cooked in front of you, in simple and classic ways. Since 1999 our focus has never changed, quality and responsible sourcing is still our main concern…we just look a bit more fancy now! Our central location in Borough Market means that London’s best produce is right on our doorstep. We are proud to say that we source most of our produce from Borough Market itself, and our fish is delivered daily from our very own fishmonger, Jarvis, which is renowned for its extensive range of the freshest fish and seafood. We're also winners at the National Fish & Chip awards too!
