   Was looking for a unique experience for Christmas dinner and ended up choosing Proof, in part because of its location at the Four Seasons Resort. While the restaurant location is superb with incredible views of the Arizona desert, and service is very attentive, the food was a major disappointment. Highlights -- the sweet potato fries and coleslaw side dishes. Lowlights -- the main courses and the appetizer. The $32 pulled pork in particular was a mushy, grayish and rather tasteless blob -- the trio of sauces helped add some flavor, but only minimally. A complimentary serving of corn bread was presented nicely but fell apart in crumbles all across the table when you tried to eat it. The roll or biscuit that came with the pork (not sure what it was) was very dried out and even a slather of butter could not resuscitate it. The $28 Proof burger was acceptable but lacking the flavor or juiciness of better alternatives available at most burger joints. Finally, the Queso Fundido appetizer ($24 with $5 upcharge for chorizo) wasn't much fun and was a tasteless mass of melted cheeses, with the chorizo not adding any detectable flavor. Overall, a big disappointment given the price point. Appreciate that the restaurant was open for Christmas, but perhaps the regular chefs were taking the holiday off given how unimpressive the food was.

   We typical have a good experience here but today they took longer than usual to service us even though we had a reservation. We waited quite a bit for the waters and a bit for our waitress to take our orders. When they asked if we were all finished. We said we were ready for dessert and then waited an additional 15 minutes for our waitress to come back to take our orders. It seemed as if she was in between serving the bar and us which delayed the service. In addition, we ordered the tamale trio, which I was under the impression was a meal but it was so tiny and more like an appetizer

   There were games on and a large number of people gathering to watch. We were in far corner so weren’t really impacted. The food was delicious and service very attentive. My scallops and grits were terrific and a few in our group loved their ribs especially. The outside lights for Christmas were lovely!

   While I enjoyed my salad bowl, my husband did not like his bbq ribs dinner. They looked dry and the sides were unappetizing

    Lovely service - everything was great there but the queso was terrible for $28. We would definitely come back.
