   We've been to 501 Prime many times. Typically, everything is very good, tonight, it was less than desirable. My wife prefers her steak "well done". She will typically request that the steak be butter-flied so it reaches the right internal temperature. We are aware that 501 does not butter-fly steaks, but they usually manage to get them right regardless. Tonight, her steak was red in the center when she cut it open, so she asked that they put it back on the grill. What came back was a filet charcoal briquet. Her $51 petite filet was barely edible. I'm happy to pay good money for good food, but this rankles me. In fairness, the other 3 meals were pretty good, but I'll be taking a break from 501. Too many good steakhouses know how to deliver a steak right to pay that much money for a steak I would not serve to my dog.

   The food was outstanding. The double cut pork chop was tender and cooked just right. It was large enough to feed four people. The boursin steak was tender and cooked perfectly. The chocolate sorbet was the best ever and dairy free to boot. Would buy by gallon if we could. Would highly recommend this place.

   It was an anniversary dinner for us. We made reservations and showed up on time. We were seated very quickly. The hostesses, the wait staff, the servers were all on the top of their game; friendly and efficient. We ordered our appetizers and salad, fresh and appetizing, attractively presented! When our steaks arrived, we were asked to cut into them to make sure they were cooked to our specification, which one was and the other was a little too rare. The server was delighted to return it to the kitchen. It returned in about 5 minutes. The side dishes were absolutely amazing. The fried Brussels sprouts with mango and a wedge of lime to squeeze over the top (a fresh new delight!) those wonderful garlic smashed potatoes with butter and chives (smack!) grilled asparagus... but let me back up and tell you those deviled eggs are not your mom's deviled eggs! The filling is mild, flavorful and totally YUMMY. When it came time for dessert, we just couldn't. A night of great food on a wonderful occasion added up to a perfect evening.

    The food is amazing, you would not think you could get food like this in Hot Springs! Excellent food and service!
