There are ninety-nine different ways to write “sushi” in the Japanese script of kanji. Each with its own unique interpretation and meaning. It was with great deliberation that our founder, Billy, chose 寿司 to best represent his personal interpretation of the word - Celebration of Fish!

That’s exactly how Billy feels about the art of making sushi and the atmosphere that surrounds it - it should be a celebration! Which is why Billy Sushi is more than just a restaurant, it is an experience for anyone who allows themselves to take part.

A three-ring performance of sorts - sushi bar, sake bar and dining room - brought to life by the performances of sushi chefs, bartenders and servers. And the Ring Master and your host, Billy.

Chef and owner Enkhbileg “Billy” Tserenbat has been cooking in the Twin Cities for more than 20 years and often checks in on tables himself, so don't feel shy asking him for menu recs. Settle into one of several sleek tables, choose a drink from the extensive sake and whisky selection, and be prepared to have one of the best nights out.

    Exceptional sushi and service! We had three starters-- the special bluefin tuna sashimi, lobster spring rolls, and shishito peppers. All were wonderful. The waiter recommended the special which we would order again. We had three maki rolls, which were generous in size, and superbly fresh. The timing of food delivery and drinks were great. It's expensive but worth it. You need a reservation because it's packed.

    The sushi is normally outstanding, except tonight. I ordered the rolls without avocado due to allergies. Only one came with avocado, one of my favorites the silly billy and I couldn’t eat it. I told the waiter it was wrong and he told me that I ordered the first three without avocado the last one my friend ordered, so he said he assumed he wanted avocados despite me stating ALL without avocado. We were seated so close to the other diners I didn’t want to make a big deal about it, but he was wrong and it put me off for the rest of the dinner. It was clear we were sharing the rolls. He could have as easily assumed that half should be with and half without avacado. The whole misunderstanding just put a negative vibe on the experience. Too bad, this used to be my favorite sushi place.

    First time and we will be back! Service was excellent and sushi was the best we have had in Mn. Specials a were better than expected and the rolls were amazing. A must try!!

    Mix feeling about the this place. Service with the hostess was not very welcoming. Our waiter was mediocre, very quiet, maybe he was new or had bad day. But we still left a good tip. Sushi is over priced !
