   Firstly, the ambiance and decor are top-notch (especially during the holidays with the lights on Water Street). You can tell that no detail was overlooked and it set the scene so nicely for a family get-together. I can not say enough about the food as well - the blue crab beignets were loaded with crab meat and perfectly poppable with a super light and crispy exterior and the escargot had a light and fluffy puff pastry swimming in a well-seasoned butter that we were able to finish off with a fresh Baguette. We all shared our entrees and even ordered one additional lobster pasta special for the table but the real stand out for me were the Snapper (which came HIGHLY recommended by everyone) and the scallops. The brown butter sauce that is served with the snapper is so velvety and rich, such a beautiful compliment to the delicate snapper meat. Desserts were also fantastic Unfortunately - I do want to remark on my service or lack thereof. While my food was out of this world, my server left much to be desired. I don't think she even actually introduced herself. She made zero recommendations without being prompted or engaging with us in any way. She was nice, I'll say that. But absent for much of the dining experience and did not properly take our order to ensure the timing on courses would be correct, we were unable to order another round of drinks at the pace that we preferred, and even something as simple as water refills were nonexistent. I know she was stretched beyond her limit because she was even taking tables outside but at no point did she seem apologetic or even aware of her absence or the effect it had on our experience furthermore it's not my AOR to help reduce labor costs by spending my hard-earned money and tipping a server for barely giving me the time of day. Many other restaurants in Tampa have amazing food and show genuine hospitality

    Shay, our server was outstanding. Personable and professional, she made our time memorable. Ashley, the head hostess did drop the ball. We checked in upon arrival and told her we would wait at the bar( we were literally 4 ft behind her). After 20 minutes and watching many people being seated my husband approached her and asked how much longer, her response was terse, blaming us for not responding to her “ numerous attempts to contact us”. Please know that one phone call was made, but due to the noise level we didn’t hear it, additionally there were several young ladies seating people and each time they would scan the room we would ask if they were looking for us and most ignored us or told us we weren’t who they were looking for. I realize it was very busy due to Amalie Arena having 2 shows that day. We specifically chose Boulon as we were going to the evening performance. Overall we had a wonderful dining experience and we will be back.
