Corn Maiden is the signature restaurant in the Hyatt Regency Tamaya. The experience starts like no other when you enter the restaurant, the ambiance is that of tranquility and warmth of a New Mexican pueblo home. Locally raised chef George Silva, has carefully crafted a menu based on the flavors of the region; prepared with elevated techniques to give a new interpretation to classic indigenous fare. Enjoy one of our signature dishes with a hand-crafted cocktail featuring uniquely New Mexican and American spirits with mixers sourced from the property and Rio Grande valley.

Great food - different combinations and use of local foods. My mom got sick and couldn’t come with us, so they specially made her a salad and some bread for us to take home to her. Our waiter was super friendly and efficient. It’s a little pricey and kind of far to get to, but worth it. I recommend, especially for people who like to try different foods.

Took forever to get a drink and to get appetizers. Plastic flowers on table very low class for supposed high end joint. Limited menu. Buffalo tenderloin vertical good but came med rare after ordering rare. Wife's chicken was tiny for $40. They eventually comped her drink and apps. Dessert was offered comped but limited choice with little appeal. Overall disappointing

Skip the new Corn Maiden, only the name is the same. Disappointing, especially when compared to the very well-remembered standards set by Hyatt from initial opening, until closing in 2017. Restaurant lacking so much attention to detail and proper management in every dept., it would take a page to list. The property is still beautiful, although the restaurant environment is now actually depressing. Smart diners will not return. Tourists/guests in the hotel should probably choose the Santa Ana cafe. Entrees are very poor value, ( food not dissimilar from Cracker Barrel) many better options to the north and south for what should be fine dining top to bottom. Was hoping for so much better upon return, am bummed to lose this option as viable place to dine and entertain. This is not sustainable and it will not last in it's current incarnation.

We were excited that the Corn Maiden had reopened so we decided to dine there to celebrate our anniversary. The restaurant did not disappoint us. Joe, our server, was very attentive as well as the other staff members. The salad was big enough for us to share. I had the lobster pasta and had to bring some of it home. I was surprised to see the chunks of lobster in the dish. We also shared the pistachio mousse which was delish. I am anxious to see what will be served for Thanksgiving.
