El Xolo revolves around native corn and local products, drawing on over 8 years of research into the Salvadoran territory. We use ingredients sourced from indigenous communities across different regions of the country, cutting out intermediaries to connect directly with producers and create a direct impact on these communities.

We work in collaboration with various permaculture, biodynamic, and sustainable fishing projects, all in favor of the environment, which play a key role in the communities surrounding these initiatives, dignifying the work of their producers.

We are supported by Claudia Alfaro Moisa, Curator of the National Museum of Anthropology, Dr. David J. Guzmán, archaeologist and museologist.

Our tasting menu consists of seven courses, offering a rollercoaster of the beauty and wonders of our country.     I decided to try this restaurant while visiting family in El Salvador. The restaurant was amazing, and the staff was incredibly informative, helping me decide which dishes to order and walking me through the menu based on my knowledge of Salvadoran food. I would definitely highly recommend this restaurant to anyone traveling to El Salvador. Be sure to order a wonderful drink from their talented mixologist, Jarvin, or ask for Jorge or Alfonso for exceptional service.

    La comida muy rica pero todos consideraron que le faltó proteína. Al ser una reserva de 6 personas y el precio del menú de degustación esperábamos una experiencia más memorable. Nadie nos recibió en la entrada, la posición de la mesa aislada al final del pasillo y cerca de los baños, el cambio de personal entre un platillo y otro. El tiempo de espera entre cada paso fue considerable. El personal muy amable y la coctelería muy buena.

    The food is amazing. Sadly, the restaurant counts with insufficient waiters that can’t offer a high quality on their service. The three waiters looked exhausted and impatient taking orders. I hope that the restaurant will fix this issue because the food and ambiance is amazing!
