El Xolo revolves around native corn and local products, drawing on over 8 years of research into the Salvadoran territory. We use ingredients sourced from indigenous communities across different regions of the country, cutting out intermediaries to connect directly with producers and create a direct impact on these communities.

We work in collaboration with various permaculture, biodynamic, and sustainable fishing projects, all in favor of the environment, which play a key role in the communities surrounding these initiatives, dignifying the work of their producers.

We are supported by Claudia Alfaro Moisa, Curator of the National Museum of Anthropology, Dr. David J. Guzmán, archaeologist and museologist.

El Xolo es uno de mis restaurantes favoritos en El Salvador. La atención del staff es fina y verdaderamente te hacen sentir como en casa. Los alimentos me sorprenden siempre, el sabor explota en el paladar con cada bocado. Recomiendo ampliamente visitarlos y vivir una gran experiencia culinaria.

Food was great. As were the drinks. Service was mostly great except some dishes came a bit out order and when we ordered two of the same dish (we were a big group) one came much later than the other. Obviously kitchen was a bit not on top of the planning. One major complaint was the lighting. There were some small spots about our table and one was flickering. There was no dimming option. Either very bright or off. Just made the ambiance a bit odd for a high end place overall. But as stated, food and overall service staff were very good.

The absolute best food in El Salvador without a doubt. The food is highly innovative while using local ingredients and playing with the flavors and textures. Drinks are unique and different. The food hall is lively and aptly decorated while the kitchen is open and visible. I watched the head chef tinker and taste a new dish. The innovation while building on the local familiar ingredients is highly reminiscent of the Bogota star chef at El Chato. The total cost for all the dishes plus drinks was under 100pp. Restaurants on this level in NYC are literally 6-8 times as much. Return tickets to San Salvador are cheaper... ;)

Es un restaurante muy acogedor , con temática mesoamericana , los platillos riquísimos , degustamos platillos salvadoreños pero diferentes. Que los hace singular y únicos . Me encantó . Y la atención es excelente

No vale lo que cuesta. El servicio súper malo. Habíamos reservado para 9 personas pero como la mesa era de 14 sillas nos dijeron al inicio que en caso llegaran más personas las iban a sentar en nuestra misma mesa, lo cual nos pareció indignante pues nuestra reservación era para una celebración privada en familia… la mesera que nos atendió no tenía buena actitud, parecía que nos estaba juzgando por la cantidad de platos que pedimos en un inicio. Para el tipo de restaurante “exclusivo” que dicen que es, la comida no es wow, con suerte llega a normal. El menú no tiene nada de especial y no tiene mucha variedad. La música parecía que estábamos en un bar o chupadero y no en un restaurante exclusivo. No cuentan con el mismo tipo de vajilla para todos los comensales, lo cual pareciera que no están preparados para recibir una cantidad de gente tan grande. Definitivamente no lo recomendaría ni volvería a ir.
