Owned by Chef Allen Hess, FORC brings farm to table in the heart of Waimea. FORC showcases a farm to table aspect by bringing fresh harvests from Farmers, the Ocean and Ranchers. By changing our menu seasonally, we are able to get creative with what Hawai’i has to offer us. Local style brunch items like our FORC signature sandwich, brown butter banana pancakes and our housemade bacon. Hearty seasonal dinner dishes like our Big Island grass fed beef, whole roasted fish, and Chef’s Hawaiian Meal. There are vegetarian, paleo and gluten free options too. Chef Hess (and FORC owner) comes out to chat with you and ask about your meal - and that tells you a lot about how this place operates. Very solid service, nice spot right down in the center of Waimea but you feel like you're out in the countryside. Ahi sashimi and "adult" mac and cheese (gnocchi + goat cheese + bacon) were both excellent. The NY strip was locally sourced (Parker Ranch) and was super flavorful. Cocktails were also professionally prepared and outstanding; dessert was macadamia nut and chocolate heavy and that was all to the good as well. Would come back in a heartbeat.

Great meal with our ohana. Chef Allen and his team executed the dinner service to perfection. From the standard menu appetizers and steaks, to the elevated preparation and presentation of the catch of the day (4lb Onaga). Everything was on point!

Amazing meal: Portuguese bread, lettuce wraps and bacon to start. Whole roasted kalekale was delicious and perfectly prepared. Same with butter fish, chicken, filet mignon. Finished with chocolate crème brûlée. Cocktails were also great. Loved the ube lemon drop martini and family enjoyed their mai tais. Great meal and excellent service.

When this restaurant first opened, it was excellent but things have dropped off a bit lately. The service is still good but the food is not what is was at first. Hopefully they can improve.
