There’s a saying in Japan, ‘Ichi-go ichi-e,’ which means, every moment is one-of-a-kind and something to be treasured. This is the philosophy of our neighbourhood restaurant FUMI, located in the centre of Brighton.
A slow restaurant in a fast-moving city, FUMI is a place where flavours, service and interiors are harmonious.
A simple Japanese inspired menu driven by the seasons, our moods and by whatever is fresh and exciting in the moment.

At FUMI, we source all our produce, meats and fish from small, local suppliers. Nothing is mass-produced or served out of season, with everything we create coming directly from the farm to your table. Each meal at FUMI is a celebration of bountiful harvests, beloved community, and our favourite pairing of food and friends.

    The food at Fumi is really the star of the show! We came about a year and half ago and had the Omakase 4 dish menu. We then came back for Valentines day this year and while we were hoping to have the same again (I also emailed ahead to ask if we could turn up for omakase), I wasnt told that they would only be doing a 7 dish omakase menu which cost significantly more. This was a little dissapointing upon arrival but understand if the kitchen is only expecting to do one omakase set menu. However, we stuck about for the food as we know its brill and went for the salmon, pork, and the moriawase tenpura. All was delicious. The great food could be even better supported by an improvement in service. Unfortunately another table nearby felt compelled to complain about it, which left us a bit apprehensive before ordering. It did unfortunately take 30 mins for us to order (think we might have been forgotten at the back) and we had to get the attention of a waiter to do so. It was a bit strange as well, that multiple dishes seemed to go to tables they werent for, and servers seemed confused. Slightly dissapointed that there were no dessert wines also as these were visible on the menu, but were told they didnt have these due to change in menu, again not a big deal. We also were asked if we had paid, when we hadnt yet -perhaps a general lack of communication between managers and servers? Everyone was polite and We didnt mind the wait, as the food is so good. A generally good experience, and worth visiting for the fantastic food that had us so full!

    The atmosphere and decor of the restaurant was lovely. The food was amazing and the cocktails were also great. The only thing that let down the restaurant a little was the service. The staff didn’t seem to know who ordered what, what table was what number…etc. just seemed a bit disorganised. But overall a really nice valentines meal.

    Spent my birthday with friends at fumi we had the tasting menu which was absolutely delicious & the English white wine was sublime which I recommend you trying The service was very good, friendly & helpful Will definitely go again and recommend to friends

    Unfortunately, we did not have a good experience at this restaurant, despite high expectations based on friends’ recommendations. I visited on a Tuesday evening with my family to celebrate my wife’s birthday. First, the location is beautiful—both inside and out. The décor is modern and stylish, creating a lovely atmosphere. However, parking is quite difficult. After 15 minutes of searching, I finally found a spot and we arrived at 8 PM Upon entering, we were impressed by the ambiance, and it wasn’t particularly busy in our view, just one large table of about ten people and four smaller tables, including ours. The menu looked fantastic, full of tempting options, so we decided to go for the tasting menu (five courses) and ordered a few appetizers separately for the kids. We knew the tasting menu was the chef’s selection, but unfortunately, it was quite disappointing. The choices didn’t seem well thought out, and to make matters worse, we ended up receiving dishes we had already ordered separately. The biggest issue, however, was the service time. Each course took nearly 30 minutes to arrive, and by 10 PM, we still hadn’t received our main course. I complained to the waiter multiple times, expressing my disappointment, especially given the restaurant’s reputation. The staff was clearly overwhelmed—only two people were managing the entire front-of-house, handling orders, serving, making drinks, and processing payments. It also seemed like the kitchen was understaffed, possibly with just one chef working. Towards the end, the manager came over to apologize. He was very professional and explained that this was an unusual situation. As a goodwill gesture, he offered a 50% discount on our bill, which was appreciated. While the customer service at the end helped improve our impression slightly, the overall experience left much to be desired. I hope this was just an off night for them, but based on our visit, I wouldn’t be in a hurry to return.

    Turned up to find restuarant closed. Waiter/manager opened the door to inform us they were closed for a private function for the evening. However, since the booking was taken by their system they were going to open up for us and one other table booking! Most of the menu was available and the food served up was excellent, service friendly and attentive. Despite there being only 2 tables and a lack of atmosphere as a consequence, we had a good time. The decor and attention to detail in the creation of the restuarant is very good. Once again, thanks to the staff opening up for us to experience the excellent food. Also, thoughts with the head chef who managed to burn himself on the day. Will definately return.

    The space is beautiful and calm - spacious and well designed. Service was attentive, food was slow in coming but tasted good when it came - and we were not rushed or pressed to finish - easy and pleasant evening - would go again
