Authentic Central Texas Barbecue featuring the Texas Trinity - Brisket, Ribs, Sausage. Great craft cocktails including our famous Smoked Orange Old Fashioned. Incredibly good desserts like Peach Cobbler and Pecan Pie. Super delicious Breakfast Tacos. It's like taking a trip to Texas the minute you walk in the door.

Owner Jack Timmons grew up in Texas and has lived in Seattle for the last 2 decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak and mesquite and started the Seattle Brisket Experience. After a year+ of practicing the art of barbecue, and serving succulent smoked meats to thousands of Northwest BBQ fans at BBQ raves, Jack opened a restaurant in the SoDo region of Seattle in 2014 to bring Central Texas BBQ to the people of Seattle and the Puget Sound region!     Jack’s is our go to place for all things BBQ! The ribs are fantastic. The chili sin frijoles is the best! Service is usually very good, but it may take a few minutes for the food to arrive, but no worries, it’s worth the wait!

    I've only eaten at Jackalope in Columbia City and thought the Brisket tacos were fabulous. Had my first meal at Jack's on Airport Way and there were three of us. I had the two meat dinner consisting of the beef brisket I believe they call it the Dallas, just slices and pulled pork. Both on the dry side sad to say. My companions had the pork ribs which they enjoyed, though also on the dry side. One had the Beef Brisket the other way (? Austin) which was chopped and mixed with some kind of sauce in a bowl. He felt "you missed the meat for the sauce". The flavor of the rubs were good but meat just dry. We all had the collard greens which were tasty and the special side which was Mexican corn on the cob, also tasty. Service was great and the ambiance was what I'd expect from a bbq joint, comfortable but not "cushy comfy" and it can get loud at times. There is outdoor seating but we were inside and the place wasn't packed on a Wed.; our conversation was not strained by having to speak up. For the price point I expect my meat to be perfection. They're either buying too lean a cut and or cooking too long. I've had better all the above bbq from a few home cooks who do their own smoke and bbq.

    Great breakfast BBQ tacos. My ranking: 1) Brisket 2) Beef Bacon. 3) Sausage. However, all were good, so it’s more of a personal choice.

    This was our first visit and we had a great time. Very casual restaurant and good food. Everyone enjoyed their dishes, especially the brisket. We will definitely go again.

    Great selection of delicious barbecue meats and sides. Generous portions. Not inexpensive, but we had leftovers! Great for groups or celebrations. Fun decor and lively not quiet. Inhale deeply and enjoy the bbq smells.
