Located within an intimate space found in the newly renovated Hilton West Palm Beach, Moody Tongue Sushi presents an exclusive 15 course omakase experience highlighting a hyper-seasonal, elevated sushi menu from Executive Sushi Chef Hiromi Iwakiri alongside a curated beer pairing from MICHELIN-starred Moody Tongue Brewery's acclaimed brewmaster Jared Rouben.

Guests will enjoy an evolving menu highlighting pairings such as Hokkaido Sea Scallop, served with edamame and ossetra caviar, with a Pressed Asian Pear Saison; Madai, served with Florida orange zest and sea salt, with an Orange Blossom Belgian Blonde; and a decadent Florida Stone Crab Hand Roll, adorned with green apple and sauce dijonnaise, paired with a Cherry Oud Bruin. A curated menu of spirits, wines and cocktails is available as well.

The 15 course omakase menu is currently $125 per guest and the curated beer pairing is $65 per guest.

I honestly don’t know what more to say other than it was 100% superb. The food was outrageously delicious and the service was so appropriately kind and lovely. We are very grateful.

This was an amazing experience in a beautifully intimate setting. The service was spectacular. Prinzes and Chef Hiromi made the experience very special! The beer pairing complemented the fish and was well worth trying! The quality of the fish was fresh. We are excited to return!

The service was swift and friendly. The food was above and beyond. And of course the beer pairings were precise and excellent. With myself having 20 years of experience in the restaurant industry and having lived in Chicago for a decade, I can tell you first hand that Chicago dining is elevated and hits different. And Moody Tongue, being based from Chicago, did not disappoint. Brewmaster Jared Rouben even served us a few beers and was very professional, informative and witty all at the same time. Great food, even better beer and top notch energy from the staff. I highly recommend!
