Chef Trey Smith is co-owner and chef at Saint-Germain, an intimate tasting-menu restaurant in New Orleans' Bywater neighborhood. He collaborates with Chef Blake Aguillard and General Manager Drew DeLaughter to offer a dynamic culinary experience that blends French influences with Southern roots. Before establishing Saint-Germain, Trey strengthened his culinary skills at Restaurant August under Chef Michael Gulotta. He later joined Mopho as the opening chef de cuisine and contributed to the launch of Maypop. His dedication to innovative cuisine has earned him multiple nominations for "Best Chef: South" from the James Beard Foundation.

    What a thrill to go to The Skyline Lodge and eat at Oak Steakhouse. Mike and the staff took good care of us and we all enjoyed our brunch selections. Good drinks too ! Don’t miss this gem if you are visiting Highlands.

    Perched on a peak overlooking the mountains, this is a great option when in Highlands. Excellent attentive service. The Venison Wellington was outstanding. We’ll definitely be back!

    I took my family for Saturday morning brunch while we were on the way to drop them off for camp. We thoroughly enjoyed the monkey bread as a starter. We followed this with the country fried steak with eggs, Nutella waffle, pastry basket, and egg, bacon and biscuit breakfast. The food was excellent as was the service. I would definitely enjoy this establishment again in the future.

    This was our first time at Oak. It was fantastic. Beautiful setting overlooking the mountains. The food was spectacular. The service was phenomenal. We were fortunate to have Debbie as our server. She previously worked at Wolfgang’s on Main in Highlands (which is now closed) and is one of our favorite servers. Wonderful evening. Thank you Oak Steakhouse!

    Everything perfect. From Debbie as awesome server to Rich the Manager visiting each table to filet et al. The French Press Coffee is the absolute BEST Wedge salad outstanding. Espresso martini the final culinary treat! ❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️

    Food was outstanding, I had the Steak Frites and whipped potatoes. The steak was cooked perfectly. Rob was my server, he was also outstanding…the best I have had there. He went above and beyond to make my experience memorable as I was dining alone that night. I might add the bread was delightful and the small wedge very good as well.
