Mr. Cembrero first came to America from Palencia, Spain in 1994 as a high school exchange student. He lived in Irwin for about a year and kept in touch with his host family after returning to Spain.
Pallantia is the place for Cembrero to share his native home with his adopted one. “I’m a proud Spaniard,” says Cembrero. “And I want to bring the best of my country.” Cembrero grew up helping his grandmother cook paella. For Cembrero, authenticity starts with ingredients, he is importing many key items from Spain.

    So glad Juan is back cooking. I am a long time visitor to Pallantia and had stopped going while they did not have a strong chef. The food is so creative, fresh and tasty. The jerk duck wings were a treat along with the potato soup. We will be back.

    While the sangria was very good and the staff were great, the food was for the most part only fair, and the calamari was rubbery. Still waiting for Pittsburgh to get a great tapas restaurant

    Incredibly disappointing experience. One of the appetizers was cold and another was never delivered. The food that we did eat was marginal as was the service and the meal was expensive. I will not return here or recommend it to anyone else.

    Waiting for new chef. Menu was limited. We walked out. Hopefully they will get a chef and menu.

    The food was horrible. Calamari appetizer was tough, overly fried. Paella was disgusting - some of the seafood was bad. We sent everything back but the sangria.

    We just got a bunch of tapas and split between us. They were all good. I was slightly disappointed in the octopus dish as the grilled/charcoal flavor over powered the meat. Everything was very good. Definitely will go back.

    They were out of everything. Even things we ordered. They told us they were out of it after we waited 30 minutes. Octopus was charred. Black. Not edible. Obviously short staffed. Terrible experience. We brought our friends for their first experience and we were so embarrassed. Now at a bar down the street eating bar food because we are starving.
