   We went to PARC for my son’s 26th birthday/Valentines Day. He and his girlfriend said it is the best meal they have had in Aspen! Bravo! The menu doesn’t reflect the elegant preparation and presentation of each course. You will be pleasantly surprised with every bite. Our salads had the perfect balance between tangy and sweet with lots of interesting textures that melded together well. I wish the salads were bigger. We had the beef tenderloin and the salmon which were cooked to perfection. The sauces and sides added flavor and details usually found at gourmet establishments. The homemade ice cream is smooth and flavorful without the bits of ice found in some less experienced makers. I tried my son’s bourbon sauce on my brown butter ice cream. It was delicious. At the end of the meal we were presented with some homemade jellies and chocolate covered strawberries. Yum yum. We will be back!

   Tasting menu was outstanding !! Ambiance, service and food were all Michelin quality. Highly recommend when you’re in the Aspen area.

    AMAZING!!! We visited for second time. First time was exactly one year ago for our Honeymoon and this year for our anniversary. Everybody knew we were celebrating. Since our first hello at the entrance hostess, to the nice girl checking our coats, the server and sommelier. It was truly a pleasant experience. We had the polenta mushroom, the layered potatoes and an amazing Bourbon smoked elk loin. And for dessert, a lavender crème Brulee. We had a handwritten card for our anniversary and it truly made the difference. We knew and we felt special. Those details are the ones that count and make a huge difference. Thank you so much! Hopefully we will be back next January 2026! Warm regards from Cancun, Mexico.
