Join James Beard award-winning Chef Dave Beran at his 38-seat fine dining restaurant in Santa Monica, where the kitchen is seamlessly integrated with the dining room.     What an amazing dining experience. I've never written a review for a restaurant in my life but Seline deserves one. Amazing staff, fantastic food, overall perfect experience. Loved the music they were playing too... felt like it was straight from my spotify playlists. 15/10 definitely recommend.

    We’re lucky to have Chef Dave and his team in LA to experience this type of cuisine and hospitality. World class cooking with no pretension or snootiness. Well worth it! Run, don’t walk.

    An exquisite meal all around. First and foremost, the food is excellent. I mean that. Some of the best tasting food around. That can be lost in a meal with so many aspirations as this. Not here. I had the abbreviated eight course menu, and even the shortened format had several home runs, starting with an intensely flavored mushroom broth. I do think the short menu might interfere with the storytelling element of the meal, though,which was a little lost on me. The salt-baked shaved celery, granola and tartare dish was phenomenal and had a perfect pairing with a gunsmokey orange wine. The puréed apple and squash with truffle dish was one of the best things I can remember eating. A dish where you not only smell, but really taste the truffle, with a smooth texture and soft warmth. This dish was winter in a bowl. Fine as can be, but ultimately nourishing and comforting. Earthy and sweet. And the pairing here was ringing all the bells. An Alsatian grand cru field blend from Diest. This dish and pairing were like apples and honey, but the truffles and the squash made it rich and earthy. The “obvious” squab was perfect, and the dessert… I won’t go on, but I could. Like so many tasting menus, this is inherently formal, but there’s a breath of relaxation in the place. You walk in to a quiet courtyard that you wouldn’t know is off a busy street. You enter the kitchen through sliding glass doors as you would someone’s house from a back patio, and someone greets you warmly by name. You’re immediately in the kitchen locking eyes with the chefs, eyes that quickly return to their focus. To the side is the maitre d’ and then the dim and luxurious dining room hewed in rich Prussian blue, with walnut tables, and blue and ivory tufted blended-back armchairs . The walls feature large format John Chao paintings— for the most part provocative without being too distracting with one notable exception. This restaurant swings for the fences. The food and hospitality are there.

    Artistic from big to small , beginning to end! The love and beauty Chef Beran and his team puts into each bespoke dish is breathtaking! Creative and delicious combinations presented on gorgeous ceramics. The wine offerings are perfect and so unique. Everyone we met there is a gem of a human being. Overall atmosphere is joyous and fun!! Thank you for making our birthday celebration just wonderful!

    Delicious, creative and beautiful tasting menu. Can’t wait to see how the restaurant evolves after being only open for a month. Loved the non alcoholic beverage pairing. Fantastic service and hospitality.

    I'll start with the obvious - it's an expensive restaurant. $295 base price + $125 for the non-alcoholic beverage pairing (more on that later). But I would argue that if you're looking for a splurgy, high-end meal in LA this is the one you should go for and that it's worth the price for three main reasons. 1. Chef Dave has always been a conceptual sort of guy and while he's easing into it since it's just the first month of a new restaurant, you can already see how smart all of this food is and how much thought has going in to creating a narrative that is seasonal, thought-provoking, and delicious. This is probably the restaurant at it's most accessible if you want to go out with friends who like good food but are scared of Vespertine. I love that I never quite know where in the tasting menu I am - Chef Dave is great at mixing sweet and savory and disrupting the usual soup -salad-fish-fowl-meat-dessert parade. 2. The NA pairing is exceptional. These are true pairings that actively enhance the dishes (something I sometimes struggle to feel with a normal wine pairing). Each drink is complex and layered and obviously made with witchcraft. I audibly gasped twice. Do not sleep on this, it's super unique and exactly the type of thing you come to a restaurant like this for!! 3. The experience is good (I think it will become great once they hit their stride). Service is warm and attentive without being suffocating. Every server I asked could answer all of my persnickety questions about each dish. The space itself is brooding and moody, but warm. The impeccable ceramics will give you your Instagram shot (especially if you get the vividly colorful NA pairing). There are only 12 tables. The pacing of the meal was great and we left feeling full but not stuffed. This is a very comfortable place to come eat - you're mindful that something special is happening, but you don't feel like you need to be special to deserve to be there. 10/10 will go back again!
