   A beautiful place for a celebration, which is what we did last night. A couple of notes: - It's a new restaurant, and service is still learning, I guess. Bar service downstairs in Pasque before supper was very slow (10-15 minutes to be served after ordering, and the place was far from full). - Server upstairs was very good, but the wine waiter was an amateur--he was hanging around the dining room but it took 10 minutes for him to see me gesturing and waving to bring another bottle. A pro would have been watching the room carefully and seen that immediately. - Took a long time to be seated at our table (7:45 res, seated well after 8:00), but I don't really blame the staff: a group of celebrating ladies decided to read Tarot cards at our table, and the poor staff had trouble gently kicking them out. Would there have been a better way to handle this? I don't know. Here's one idea, though: we were OK sitting and waiting at the chef's table, but it's odd to me that a manager didn't offer a free drink or some other recognition that we were waiting very patiently a long, long time. Something offered would have made us feel better, even though we knew it wasn't really your fault. - Another suggestion that would have been an easy way to make us feel good: the staff very clearly knew that it was my wife's birthday, and we were celebrating with our friends. I expected some small sweet item with a candle and a "Happy Birthday" wish, or some such--you weren't at all busy at that point, and it would have been easy to do. This kind of gesture is an easy way to make guests feel good. - By the way, our dinner server was very good--my compliments to her.

   Wow! Great new restaurant. The chef presents a new twist on the food preparation in a very trendy atmosphere with staff who are attentive and pleasant. We ordered the trout and the quail. Both dishes were perfectly cooked with the meat done but moist and prepared in an interesting combination of herbs, spices, and accompaniments, e.g., pickled potatoes. The experience is enhanced by the restaurant’s setting on the top floor of the Hotel Populous. We will return.

   The ambience is AMAZING - 10/10. The food was decent. Their menu is small and really over priced for what you get. If you are looking to grab a couple drinks and enjoy the ambience this is a great place. I wouldn’t come for the food tho.

   In Denver for a conference and grateful to stay at Populus and have a culinary experience at Stellar Jay, from the front host to the bar each member of the front of the house team went above and beyond. The menu is limited but with intention and delivers. The Spelt Rasciatelli with mussels paired well with the roasted beets. Both were fresh, complex and generous. Our server was delightful and helpful. Vibe was fun but not obnoxious, decor really chic- urban cowboy meets Mad Men. I loved the experience and will hope to return with friends.

   We came to celebrate a birthday and we couldn't have chosen a better place. The food was delicious, staff was very attentive and helpful and a great wine list. We will come back!

    Upon arrival, we accidentally went up the staircase. Check in with the maitre d near the hotel desk! The atmosphere and design are spectacular. Our server Emily was nice and knowledgeable on the menu. We were seated near a beautiful wall of wood slices. The table next to us was too close for my liking. The view from the patio is stellar, although you cannot take drinks out there. I heard it’ll be open for bar service come summer. Surprisingly, our appetizer came out before our drinks that we ordered first. We tried the Melon Margarita and the Prickly Pear Cachaca, they were sweet and weak in my opinion. The beef tartare was amazing! I would’ve licked the plate. We also ordered the Bison & Venison skewer, Trout, Beets and Pumpkin cheesecake. They were all good, but nothing that I’d need to rush back for. I was upset at the end of the night at the $10 valet charge when we had called on our way to ask about parking and were told it was free valet for the first 2 hours. Overall, worth the visit!
