    Our server, Connor , was excellent. We sat at the bar at the open kitchen. Even the kitchen staff was friendly and engaging. We had the HH oysters and the ceviche, which were both delicious. Main course was the striped bass and the braised pork shank. The accompaniments were as well prepared as the proteins and we enjoyed every bite. Portions are generous. We will be back!

    The Carlin has quickly rocketed to the top of our favorites list in Breckenridge. They have an excellent happy hour every day from 4-6, with a featured special oyster each day, drink and food specials, all presented with exceptional service. We stayed longer for dinner this time and each enjoyed our meals of braised pork, steak, mahi, and salmon. Any one of us could have had one of the other entrees and been pleased--their food is prepared with such care and fresh ingredients. The service is always friendly, professional, and thorough. We've enjoyed exploring a range of oysters, pairing with different drinks and wines, and enjoying the happy hour specials. The environment is calm and classic/modern with pleasant lighting and good noise attenuation. We look forward to giving the downstairs tavern a try soon, too!

    Excellent food and service. We went for the raw bar and it did not disappoint!! Don’t pass on a visit to the underground tavern after dinner- their espresso martini was spectacular!!

    Celebrated husband’s birthday. Happy Birthday card and delicious banana bread dessert nice touch. Grouper/butter lettuce salad and trout entrees amazing. Kudos to Amelia for outstanding service. She was energetic, professional, unhurried (tho extremely busy), helpful, efficient. She was always one step ahead of us on our asks. The front desk staff, chefs, ambiance and Amelia made this evening truly memorable. Thank you! We will be back.

    I always get annoyed with junk fees - for some reason restaurants in Breck think it’s ok to understate their prices and the. Hit you with fees.

    We were in to celebrate our anniversary and the entire Carlin team made our night even more enjoyable! The food was fantastic, definitely try the crab claws and braised pork shank, both were outstanding. Highly recommend!

    After having a great experience the day before at the tavern underground (The Carlin’s basement cocktail bar) our bartender convinced us to make a reservation for dinner the following day. We had family meeting us in Breckenridge and we wanted to dine somewhere special. We arrived 45m early to our 7pm reservation for 4 and decided to revisit the tavern underground. I won’t go into detail on that experience here, but as we took the elevator up to the restaurant we were promptly seated at a nice booth in the middle of the dining room. Being a Sunday, entrees were 50% listed price so we opted for a couple cocktails and a few appetizers. I opted for oysters which were fresh and up to par for a raw bar. My wife ordered the Gruyère biscuits and our guests went for the wood fired oysters and the smoked fish and scallion dip. The biscuits were both hard and crumbly, something I suspect comes from baking at high elevation and the provided compound butter was tasty but didn’t do much to salvage the texture which was unfortunately very grainy and not fluffy as most buttermilk biscuits are. The wood fired oysters were great according to our guests, and the dip was good but the bread provided also had a similar texture issue to the biscuits. My wife, one of our guests, and myself ordered the 8pm sirloin which was the “chefs cut” of the day. My wife ordered a medium well (she’s pregnant and is unfortunately stuck with fully cooked meats) our guests went and myself ordered medium-rare. Our last guest ordered the catch of the day. When our food arrived after a long wait (45m+) all of our steaks were extremely overcooked, so much so I had to mention it. They provided another steak, which was extremely underdone, which I ate anyway to save the line cooks ego for some reason. Our side potato Rostis were burnt, and my guests risotto had the texture of baby food without any distinguishable rice. For a $200 meal with 50% entrees it’s not something I can recommend.

    We had a delightful time and meal. Staff was A plus and made the experience very enjoyable. Food was delicious and served hot immediately after being prepared-a rare experience these days. We felt at home and will return frequently

    We thoroughly enjoyed our dinner last night. Celebrating a birthday and anniversary, we were greeted with complimentary champagne. The crabcakes were amazing-very little filler and so tasty. We also enjoyed the Wahoo, Negroni cocktail, good beer and wine selection. We didn’t have room for the banana bread dessert but it sure sounded amazing. For fine dining in Breck The Carlin is our new fave. Does not disappoint. Our waiter Conner was knowledgeable and very personable. We enjoyed talking with him. We didn’t feel rushed or hovered over either. Just the right amount of attention. Great evening!! Great place!!
