   I love this restaurant! It is decorated so lovely, the presentation and taste of the food is wonderful. Waverly has been our server twice and does such a good job!

   What a special place. Just go experience The Seeker and all of its fabulousness. Everything is great…..the atmosphere, the food, the drinks, the people, the vibe. Just go and you’ll see why it’s always full of shiny, happy people.

   We drove from FTW to stay overnight at the new Interstate Inn and dine here at Chef Pyle’s new restaurant. Lovely contemporary restaurant design. Upscale and classy. We were seated at one the booths for two along the wall overlooking the open kitchen. I intended to order a Manhattan but upon discovering they're pouring Gallo vermouth decided on a Maker's Old Fashioned which was nicely done. Anne went with a glass of an Italian Pinot Grigio. I ordered that as well with my entree. We started with the shrimp ceviche. This is a unique rendering of the dish and quite enjoyable. The portion, however, was surprisingly and remarkably small for $17 even by upscale FTW/Dallas restaurant comparisons. The Caesar salad presentation here is so creative. See my pic. The dressed whole Romaine leaves are arranged in a toasted Parmesan cylinder which you crush up, slicing the leaves yourself to mix. The dressing is excellent. Again the portion is small, especially to share. But the price point is reasonable at just $10. We both opted for the grilled quail. This was the star of the show. The quail were nicely seasoned and perfectly grilled. The mound of crisp, fresh Arugula sang with the most perfect Arugula enhancing vinaigrette we have ever tasted. The poached pear, compressed beets, and seasoned walnuts all complimented so perfectly these grilled birds. So good. Were we locals this would most definitely become a regular restaurant for us.

It’s great to hear the shrimp ceviche and Caesar salad stood out to you, even if the portions felt a bit modest. We're continuously fine-tuning our offerings, so that insight helps a lot.    This is one of the newest restaurants in Stephenville. It opened under the Stephan Pyle banner, earning write-ups for the restaurant anf motel in Texas Highways and other outlets. I knew it would be expensive, but being an SP restaurant I had high hopes. Our server was wonderful and helpful. When they learned it was my wife's birthday, they printed a personalized menu for her. She was delighted. She had the sea bass and I had the southern fried chicken. Her sea nass was excellent. The chicken, not so much. The leg was okay. The breast was dry and tough. The mashed potato tots were bland, and the accompanying honey-based sauce(?) was, I'm not sure what to say. Slightly sweet with savory tones. We needed to order a side to get a full meal. The cocktails were wonderful, and pricey. The blackberry cobbler was good, except for the rock hard biscuit, which made it difficult to eat. I'm glad we went, and glad my wife enjoyed her meal.

   This was a return visit for us and again, The Seeker, did not disappoint. I had the salmon, my son the fried chicken and my husband the short ribs. Every dish was perfection. Katie assisted our table and she covered every need and detail. Grace greeted us and remembered our names…always nice!! Thank you for yet another perfect evening. Merry & Logan

   Chef Pyles has done it again! Every aspect of the dining experience here is flawlessly executed, from the service, both bar and restaurant staff, to the menu selections, to the preparation and plating of each course! Restaurant manager, Eric, is a delight! The young wait staff, mostly college students from nearby Tarleton State University, are well trained, friendly and very competent, getting the timing right between courses every time. We dined here two nights in a row and both experiences were 5-star. The bonus was getting to spend priceless time visiting with the chef himself, Stephan Pyles!    We have been many times to eat and it is always a great experience. Tonight was very busy and a bit loud. We ask to see a couple rooms and they were awesome to show our friends - we will be back for sure and tell our friends. So happy you are in our area!
