Restaurantes Carolo, named after a variation of the Italian form of “Carlos”, was the first company of the group, created in November, 2007. It represented an innovation for the creative needs of Carlos Gómez Senderos and his love for bakery. The first restaurant of the group-Carolo Bosques-was created for Carlos to have a place to work. And that’s when the story began. From that moment on, Grupo Carolo has opened several restaurants.

About the restaurant

Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Our new home, located at Alvaro Obregon 65 bis - a much wider space where gleams of natural light shine upon the surface-, is carefully assembled by Gabriela's meticulous look, and a kitchen built within Eduardo García's early memories, while living as an inmigrant in a barn in Ohio. Despite this big change, our principles initially founded remain the same: to offer food that distinguishes the best of local products.

The gastronomy of Blanco Colima it’s a fusion between Spanish cuisine with Mexican accents. Its based on products of the highest quality creating a menu that focuses on the ingredient through our chef’s perspective.

It has a relax bar that offers fun cocktails to our guests created by our mixologist focused on bringing the best experience by using always high quality ingredients. Absolutely incredible. From the service to the food to the chef personally checking on us and giving us a sample of new food he’s working on. We were dining with old friends and this experience exceeded all expectations. Bravo!
